Tunisian Tuna Salad

• 2 cans tuna packed in oil
• 1 preserved lemon, removed flesh from the centre, and finely chop the peel
• 3 (or more) tsp readymade harissa
• 2 tablespoons flat leaf parsley, chopped
• 2 tablespoons good quality mayonnaises

In a medium bowl, Mix all the ingredients together. Best served with the fricassee.
