PESACH BROWNIES

One of the things I love about Pesach is a couple of weeks before when friends and family start sharing recipes. It’s this amazing comradery that starts building up in the lead-up as we seem to be sharing in the combined joy and anxiety of feeding people while observing the rules of Pesach. People start sharing with gusto, not just recipes but memories of the people who gave them the recipe and where they ate the particular food. These recipes and these stories draw a picture of people sitting around tables across the Jewish world, experiencing not just Pesach but the warmth and comfort that food at its best can provide.

The recipe below has been shared so many times, that no one is quite sure whose it is, but we thank you non less!

4 large eggs
350g (1 ¾ cups) granulated sugar
220g (1 cup) nut or vegetable oil
1/2 teaspoon salt
90g (3/4 cup) cocoa powder
95g (1 package) chocolate pudding mix
160g (1 cup) potato starch
12g (1 tablespoon) vanilla sugar
1 teaspoon baking powder
85g (½ cup) semi-sweet chocolate chips (optional)

1. Heat oven to 180℃ (350℉). Spray 20 x 30cm (9 x 13 inch) pan with cooking spray, line with baking paper, and spray again, set aside.
2. In the bowl of an electric mixer, beat eggs with sugar until smooth. Add oil and salt and mix until the oil is well combined into the egg and sugar mixture. Sprinkle in cocoa and mix well. Add pudding, mixing slowly and increasing speed as batter thickens. Add pot starch, vanilla sugar, baking powder, and mix to combine.
3. Stir in chocolate chips if using.
4. Pour into prepared pan. Bake 22-27 minutes. Allow to cool before serving.
