- 1 large (English) cucumber, seeded and diced
- 6 ripe tomatoes, diced
- 1 red or orange bell pepper, seeded and diced
- 6 green onions (scallions), thinly sliced
- 3-4 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
In a medium bowl, combine all the ingredients and feel free to add more olive oil and lemon if needed.
