DILL COLESLAW

  • 1 small head cabbage, finely sliced
  • 1/2 bunch fresh dill, finely chopped
  • 1/2 cup good quality mayonnaise
  • Juice of two lemons
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Mix the cabbage and dill together in a large salad bowl and set aside.
In a small bowl combine the mayonnaise, lemon juice and garlic, mix well.
Add the dressing to the cabbage, season generously with salt and pepper. Give the salad an hour to ‘set up’. Can be stored in the fridge in an airtight container for up to a day
