Celeriac Wild Animals

Serves 6 as a side or children’s portion

Seder night is maybe the one time it’s acceptable for kids to play with their food. We wanted to bring some levity to the table and our wild animal celeriac bites do just that. They are bite-sized portions which present a fun springboard for conversation about the fourth plague, even if you only have ‘big kids’ at your Seder. 

These are a vegan-friendly alternative to our Wild Animal Schnitzels and Beef ‘Bearger’ Patties, but like those recipies, we’ve used cookie cutter animals to create the shapes. These are super quick and easy to make, and great fun for the kids to help prepare, too, though we advise adult supervision, as the cutters can be sharp! We bought ours on Amazon and you can find the link for the exact cutter we used here. For larger portions we recommend the Ann Clark cutters, here or the grizzly bear, here.

Ingredients

  • 1 Celeriac
  • Olive oil
  • Salt
  • Pepper

Method

  1. Peel celeriac and cut into slices approx 1cm (half inch) in thickness.
  2. Starting close to the edges, press the sharp edge of the cookie cutter through the celeriac. You may need to give it a helping hand by hammering with a rolling pin, or tracing round the outer edge with a knife. We find that the celeriac peels away from the cutter pretty easily.
  3. Pop the celeriac shape out of the cutter, and repeat until you have made as many animals as you can fit on each slice.
    *PRO TIP – keep the remaining celeriac offcuts and use in soup/stock, or throw into a roasting pan to make delicious oven chips!
  4. Brush each animal on both sides with a little oil, and place in a roasting dish or on a baking tray. Season with salt and pepper to taste.
  5. Preheat oven to 200°C / 180°C fan (Gas Mark 6 / 400°F) 
  6. Place tray in oven and cook for 30-40 minutes, turning once. The celeriac should have softened and turned golden brown at the edges.
  7. Remove from oven and serve. Also great at room temperature!

According to some sources, the climate of each wild animal’s natural habitat came with them–Why not plate your wild animals amongst salad leaves and rocket to make it seem like they’re emerging from a forest?
