30 Minute Roasted Salmon

  • 1-2 cups baby potatoes
  • 500g-1kg (1-2 lbs) salmon filet
  • 1 bunch asparagus
  • 1 cup cherry tomatoes
  • 1/2 cup samphire (available at most supermarkets and/or fishmongers)
  • Fish seasoning
  • Olive oil spray (regular olive oil is fine, too)

Start by preheating your oven to 200 C (400 F).

Spray a large roasting tin with olive oil spray. Add between 1 and 2 cups of miniature potatoes, cut any large ones in half. Cook the potatoes for about 10 minutes in the oven.

Add to the roasting tin between 500g- 1 kl (1-2 lbs) filet of salmon, season the salmon with fish seasoning a pinch of salt and olive oil spray. Cook salmon for about 7 -10 minutes depending on thickness.

Add 1 bunch asparagus, (woody bits trimmed off) 1 cup cherry tomatoes and 1/2 cup samphire to roasting tin, season lightly with fish seasoning salt and pepper and olive oil spray, cook for a further 5 minutes or until the potatoes and salmon are cooked through.
